An overly short synopsis for the Americans among us:
April 25, The Day of the first major action for the Aussies in WWI. The Aussies and New Zealanders, along with some British forces landed on the Gallipoli Penninsula (the landing site was eventually renamed Anzac Cove. with the intent to capture it and quickly move from there to capture Constantinople and take the Ottoman Empire out of the war. Didn't work. There is some historical debate over whether it was known it wouldn't work and the aussies were sacrificed or whether it was a genuine blunder or was a simple miscalculation. And in any case, this was the first in a series of actions where the British command threw the Aussies into the worst situations. But in either case, the Ottomans were much fiercer than anticipated and it quickly bogged down into a stalemate. Approximately 6,000 Australians lost their lives between April and December, 1915 when the allies withdrew. The Withdrawl became noteworthy for the very little loss of life during the withdrawl itself. The AIC then was reassigned to France. The Australian causualty rate there made Gallipoli look like a picnic. Only 3 of an entire Battalion survived during one offensive, for example. The mounted forces were assigned to Suez where they eventually captured Present day Lebenon and Syria. The Ottoman empire then sued for peace in October, 1918. All told, In WWI, out of a nation of about 5 million, 300,000 Australian men enlisted and about 260,000 became casualties (60,000 dead)
Anzac Day first was first commemorated officially in 1916 becoming ubiquitous in 1927. During WW2, it became a day to commemorate Australia's war dead there as well and eventually became a day to commemorate her War dead in all wars.

Much as I hate to say it, but the most likely reason was a combination of the first 2. The British chiefs-of-staff were still very much in "we are the British Empire" mode at that time, and they couldn't possibly perceive the concept of failure, so just bludgeoned ahead with an ill-conceived plan regardless.
As you correctly pointed out, Gallipoli wasn't the only time the ANZACS got the rough end of the stick (or the British and other Commonwealth troops for that matter), it's just this engagement was primarily ANZACS so is the one most remembered (quite rightly).

I fail to understand why everytime Renegade gets bumped by the system, or decides to think things over,or does anything, he gets bagged on. It's not like no one else around here has changed empires. Yet as soon as he joined us, Several Jedi members posted snide comments OVER HERE NO LESS, "Oh he'll leave, he has no loyalty, etc." To me that's pretty fair weather friendly. Not telling you what to do or how to act, but sheesh. Now that Sirian's gone I guess everyone needs a new punching bag.
